I’m Taking You With Me · 30 October

The stewed apple cobbler.

With a brown-butter oat lid. The apples, which I stewed for what felt like forever and then rescued with brown butter and oats.

The episode’s plate: an open arched door, a lantern on the step, and light falling out across the floor.

What you need

If your apples are swimming

A tablespoon of cornstarch in two of cold water, simmered in first, will gather them up.

What you do

  1. Heat the oven to 375°F.
  2. If the apples are loose, stir in the cornstarch and simmer a minute or two.
  3. Brown the butter until it smells toasted and the little solids turn golden, then take it off the heat.
  4. Mix the oats, flour, sugar, cinnamon and salt, and stir in the butter until it clumps.
  5. Scatter it over the apples in a baking dish, big pieces and all. Please do not pat it flat.
  6. Bake twenty-five to thirty-five minutes, until it is golden on top and bubbling at the edges. Let it settle before the first spoonful.

If you make it, I would love to hear.
